Easy Recipes For One or Two

This year both of my sons are living in their own homes and, despite the fact that they are both very comfortable in and fairly knowledgeable about the kitchen and cooking, there are still many basic recipes that they are unsure how to put together.

So while both of my sons are accomplished The Best-Ever Buttermilk Pancake Recipe makers and can make a homemade pizza, they stumble when it comes to staples like mashed potatoes and homemade macaroni and cheese. 

It is my hope that by sharing a few easy recipes here on my blog that make a few servings rather than enough for an entire family, that they will have these posts to turn to when they want to make one of these basic items.

And interestingly enough, as a relatively new empty nester, I'm also struggling in the kitchen these days so I could stand to have a new collection of recipes for one or two people, too.

  1. I've had to learn to cook for just two, then one in recent years and it's harder than you'd think. You have to stop yourself from peeling 6-8 potatoes when all you need is ONE. :) Recipes for one or two are very helpful.

  2. Exactly what we're going through, WE. All of my favorite recipes are for family sized meals. I can't tell you how many times I've made the recipe and then quickly realized I should have made half or even less of the recipe...

  3. I have several years of cooking-for-two experience under my apron now, so I'll offer this easy suggestion. I freeze individual boneless chicken breast portions. Unwrap one and thaw it in a zipper bag with Caesar dressing. Prepare on the grill or on top of the stove (whichever the weather allows), slice and serve on a plateful of salad tossed with more Caesar dressing. Add cucumbers, tomato, avocado, or whatever you like to the salad. We usually have a fresh-out-of-the-freezer-baked loaf of multi-grain bread with ours. One of our favorite meals, year-round. We go heavy on the salad, light on the chicken so one piece of chicken is usually enough.

  4. That's brilliant, Susan. So easy and ingredients that everyone at least in my family, loves. I also love the fact that you can customize the salad part with whatever add-ins you like.
